Blueberry Pie
Preheat oven to 425 degrees.
Crust:
1 cup flour
pinch salt
1 stick butter at room temperature
3 tablespoons sugar
Mix ingredients together. Press into pie tin. (This recipe will make one bottom crust. Make a second batch for the top crust.)
Pie Filling:
4 cups blueberries (we used frozen from Costco)
3 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon cinnamon
3/4 cups white sugar
1 tablespoon butter (melted)
1. Wash blueberries.
2. Mix blueberries, cornstarch, sugar, cinnamon, and salt.
3. Pour the blueberry mixture into crust.
4. Roll out second crust and place on top of pie.
5. Sprinkle cinnamon and sugar on top (optional)
6. Cut several small slits in the top of crust.
7. Bake for 50 minutes or until mixture is firm in the center.
